Char/Charring

Charring is the extent to which a distiller partly burns the internal surface of the wood casks before loading the barrels with whiskey for purposes of adding smoky aromas and flavors to whiskey during maturation or aging. The char levels begin from level one to level seven, depending on the time duration of charring.
