My first pour of 1792 Cognac Cask Finish at 95 Proof. I’ve always been a fan of cognac finishes, so I was excited to try 1792 Cognac Cask Finish when I heard it was being released. After my first pour, I can honestly say it exceeded my expectations, especially for a $39.99 bourbon. Much better than anticipated. It almost feels like 1792 is trying to make a statement with this one.
Nose
Light and inviting. Fruity berries lead the way, followed by soft spice. It’s pleasantly mild and sweet on the nose without being overpowering.
Palate
The palate largely reflects the nose but with more depth. Caramel, honey, nutmeg, and oak come through clearly. The cognac influence adds a noticeable sweetness that some bourbon drinkers may find a bit much—but if you enjoy sweeter finishes, it works nicely.
Finish
Longer than expected for a 95-proof bourbon. It reminds me of a warm spiced honey graham cracker, with a lingering sweetness that almost borders on honey fudge.
Overall
This one is surprisingly good. In fact, I’m tempted to experiment by blending it with my 1792 12-Year, which is much drier. I’ve found that pairing it with sweeter bourbons like this Cognac Finish can balance it out beautifully.
