I’ve always been drawn to whiskey producers that experiment with oak finishes or unique wood types (the Midleton Dair Ghaelach Irish Whiskey series comes to mind). That curiosity made this Bardstown Bourbon Co. release especially appealing. While I know little to nothing about Garry oak (Quercus garryana), the curiosity alone was enough to spark my interest, and it certainly delivers a wonderful tasting experience. So, here's my "first pour" review of Bardstown Bourbon Co. Cascadia Garryana Oak Barrel Finish.

Nose

Right out of the bottle, the aroma is immediately inviting. A soft burst of maraschino cherry is supported by rich dark brown sugar and a gentle confectionery sweetness. Notably, there is no ethanol sharpness whatsoever.

As you sip on it, the profile transitions into a spiced oak-forward character, think toasted wood and a dusting of cloves layered over a lingering brown sugar sweetness. A subtle cherry note continues to weave in and out beneath the surface. After a few sips, a faint marzipan nuance emerges, adding a lightly nutty, almond-like complexity.

Even to a non-whiskey drinker, the nose is approachable, appealing, and free of harshness. These are the thoughts from my wife who is not a whiskey drinker.

Palate

The tasting experience begins with a soft brown sugar sweetness before quickly shifting into a more assertive profile dominated by leather, dry tobacco leaf, seasoned oak, and baking spice. There’s a clear structure here; drying, yet never tannic.

The 107 proof feels dialed in perfectly. The oak influence suggests maturity beyond its stated blend (10-year Kentucky and Indiana bourbons with a touch of 9-year Kentucky bourbon), offering a depth that feels older than 9-10 years.

As it evolves, the whiskey reveals its dynamic nature. At times, it leans dry and oak-driven, emphasizing spice and structure. At others, a subtle sweetness resurfaces, bringing notes of maple syrup, caramelized sugar, and occasional cherry accents.

Letting it fully coat the tongue highlights this interplay; simultaneously drying and sweet. A touch of toasted almond and faint cocoa bitterness occasionally appear, adding further nuance.

This is a bourbon that rewards patience. While not overly complex, it is remarkably expressive, and what it does, it executes with precision. The absence of ethanol from nose to palate is particularly impressive.

Finish

The finish leans dry, led by oak, tobacco, and clove, with lingering baking spice warmth. A thread of maple sweetness carries through, softening the edges just enough. The heat is gentle but persistent never sharp.

This is a bourbon that will appeal to enthusiasts who appreciate oak-forward, balanced, and nuanced profiles. It walks a fine line between sweetness and dryness, offering an evolving experience without flash.

For my personal palate, this is exactly the kind of pour I reach for; refined, balanced, and grounded in oak-driven character.
