Detailed Tasting Notes

Nose Review - Rating: 79

The aroma starts with traditional brown sugar, caramel, and mildly toasted and sugary notes. The nose of Redwood Empire Whiskey Grizzly Beast Bourbon has density, warmth, and buttercream creaminess that is very inviting. A very mild baking spiciness is layered right in the middle of the other notes and is more noticeable later in the nosing. There is some ethanol, too, on this first pour.

Palate Review - Rating: 79

The first sip of this 100-proof bottled-in-bond was very nutty and spicy. The rye spice at 23% is very evident, as is a slight astringency from the wheat. A layer of mintiness comes to the for once it hits your mid-palate and beyond. The palate of Redwood Empire Whiskey Grizzly Beast Bourbon is drier than sweet at a 60/40 ratio. This is an engaging pour because black pepper and oak became prominent later in the tasting, but there was also a buttery creaminess swirled in with that.

If you like a traditional bourbon profile that leans more toward the spicy, peppery end of the spectrum, Redwood Empire Whiskey Grizzly Beast Bourbon is a good choice. This is a bottled-in-bond bourbon with an uncommon mash bill of 66% corn, 23% rye, 7% wheat, and 4% barley.

Finish Review - Rating: 76

The finish is nutty, peppery, dry, and leathery. Oak is present, too. Redwood Empire Whiskey Grizzly Beast Bourbon goes dryer than the palate. There’s an excellent heat initially on the back of the throat, but it does not last long and immediately proceeds to a low-level warmth.
