Barrell Craft Spirits has built its reputation on creative blending and unconventional finishing, and this release certainly continues that tradition. This is my review of Barrell Whiskey 18 Year Finished in Cabernet Sauvignon and Sauternes Barrels, an intriguing combination of mature whiskey, rich Cabernet influence, and the luscious sweetness of Sauternes.
Nose
One of the best nosing experiences I've had in quite a while because it's so different. Think fruitcake, creamy cotton candy, and sweet fudge-covered prunes. The aroma is spectacularly rich and decadent.
Palate
I was curious how my favorite wine, Cabernet Sauvignon, and my new favorite cask finish, Sauternes, would work together, since I'd never experienced those two finishes in the same whiskey. The ethanol is definitely present at first, but the mouthfeel is incredibly creamy, and that creaminess builds with every sip. Wonderfully rich and luxurious, with a touch of acidity. The proof softens noticeably as you continue drinking. A bit of graininess and spice emerges on the back end. It drinks like its full 125.21 proof initially, but that impression gradually melts away thanks to the exceptional mouthfeel.
Finish
This is where the Cabernet Sauvignon influence really shows itself, bringing a pleasant dryness without becoming overly tannic. The heat is surprisingly low to moderate, especially considering the proof.
Finally
I own more than 30 different Barrell releases and have been collecting them for about six and a half years, since the beginning of my whiskey journey. Early on, they were known for some bold and unconventional experimentation, and the results could be hit or miss. Over the past two years, however, I've loved every single release they've produced.
