Stellum Bourbon is a delicious prototypical high-rye bourbon that lives up to expectations. I had been waiting for Stellum ever since I heard it was being produced because I'm a fan of Barrell products. However, I had to wait until my third or fourth tasting to review Stellum. Frankly, I was not a fan of it my first two tastings, but since it was a Barrell product, I gave it the benefit of the doubt. In my experience, Barrell products always get better the longer they are open. I'm so glad I stayed with this bourbon which is a blend of three bourbon mash bills, two of which are high-rye.

Detailed Tasting Notes

Nose Review - Rating: 78

On the nose, as of this tasting, there’s still not much other than mild baking spice and ethanol.

Palate Review - Rating: 85

On the front end of the palate, the spice is very heavy with a very mild undercurrent of sweetness. There’s saltiness and spiciness. The vanilla and caramel are very, very mild; albeit still sweet. This is a strange tasting for me because it’s alternating between sweet and spicy; sometimes it’s sweet and the next tasting it is spice dominant. Nevertheless, it is very good and this contrast creates a very nice tasting experience. Even though the mash bill is undisclosed, you can tell that it is definitely a high-rye bourbon as you can taste the rye spice. The mouthfeel is buttery but light at a 114.98 proof level.

Finish Review - Rating: 81

Its sweetness comes in a little bit stronger on the finish; which is of moderate length and heat.

Uniqueness Review - Rating: 80

Why not particularly unique, it does what it does very well.

Value Review - Rating: 82

Stellum's price point is right where it should be. It's good to have a Bourbon you can rely on that is not at one of the higher price points.

Smell IS taste. I am just a guy who has been hit with the bourbon bug and who has come to the conclusion that life is too short to drink average tasting bourbons. Go Gators!
