Distillery Tasting Notes

Made by Found North

White pepper, earthy notes, turbinado sugar. It's a shortbread cookie with crushed peanuts on top. The palate rich fortified wine sweetness. There's black pepper but it's like a fresh toffee. Finish is long with dark chocolate and oak.

Finished for 8 months in Cognac casks. Age: 50% 12 year old rye; 20% 19 year old rye; 30% 21 year old corn.
